Job Description
The Process Controller plays a key role in ensuring product quality and food safety within a bakery production environment. This position develops and maintains Statistical Process Control (SPC) documentation, monitors weights and measurements, verifies ingredients against approved formulas, and supports continuous improvement in quality control processes. It is an excellent entry-level opportunity for individuals with a foundational background in quality control or sciences who are looking to grow into a quality assurance technician role.
Responsibilities
- Develop and maintain Statistical Process Control (SPC) weight sheets to monitor product compliance with established standards.
- Ensure the calibration and proper functioning of scales and other measuring equipment used in the production process.
- Conduct thorough inspections at all stages of production prior to packaging to verify that ingredient part numbers and descriptions align with approved formulas.
- Assess potential food safety and quality concerns during inspections and take appropriate action to address issues.
- Input and maintain test data digitally using a tablet to enable efficient review, analysis, and traceability of quality information.
- Complete mass balancing checks at least twice per shift to confirm consistency and accuracy in product weights.
- Analyze inspection data and prepare reports regarding weight control, finished goods, and quality checks, clearly documenting any deviations from established standards.
- Identify opportunities for improving quality control processes and implement effective methods to enhance product quality and compliance.
- Communicate any quality or compliance concerns promptly to appropriate personnel to ensure timely resolution.
- Confirm that all ingredients staged on the production line correspond to the approved formula before use.
- Record target weights and minimum and maximum operating weight ranges on both the SPC weight sheet and the tablet system.
- Complete graph charts and weight check sheets as outlined in the Process Control Standard Operating Procedures (SOP).
- Maintain a clean and organized work area and ensure scales and related equipment are free from debris.
- Train new employees on process procedures, quality standards, and documentation requirements.
- Adhere to all Good Manufacturing Practices (GMP), food safety, and plant safety regulations within the processing facility.
- Report any food safety and quality concerns immediately to supervisors and quality representatives on shift.
- Perform other responsibilities and duties as assigned by management to support production and quality objectives.
- Quality control experience in food manufacturing, typically 2–3 months or more, with a focus on product inspection and compliance.
- High school diploma or equivalent.
- Ability to work independently with minimal supervision while demonstrating strong ownership of quality responsibilities.
- Proficiency in using test equipment such as Quantum meters, Bostwick meters, weight scales, calipers, thermometers, rulers, and calculators, including performing checks at least every 30 minutes.
- Capability to perform basic math calculations accurately with the aid of a calculator.
- Excellent organizational skills with the ability to analyze, interpret, and graph data on SPC documents.
- Strong oral and written communication skills to support adherence to quality standards and effective issue resolution.
- Basic computer skills, including proficiency in using tablets and familiarity with MS Word and Excel.
- background or education in sciences is beneficial and supports advancement into quality assurance technician roles.
- Experience or interest in bakery or food production environments.
- Self-motivated with strong leadership qualities, including the ability to guide and train new team members on process procedures.
- Bilingual language skills (English/Spanish) are a plus and can support broader communication on the production floor.
This role is based in a bakery production facility and follows a first-shift schedule, typically from 6:30 a.m. to 2:30 p.m., with an expectation of overtime as needed. Work on Saturdays may be required depending on production demands. The environment involves working around food processing equipment, scales, and measurement devices, with frequent use of test equipment and tablets for data entry and analysis. Team members adhere to Good Manufacturing Practices, food safety protocols, and plant safety regulations at all times. The position offers a shift differential for qualifying shifts and provides a structured, fast-paced setting where attention to detail and cleanliness of the work area are essential.

This is a Contract to Hire position based out of Bourbonnais, IL.
Pay and BenefitsThe pay range for this position is $18.50 - $21.61/hr.
